What is the optimal temperature to freeze food?

Different food has different freezing temperature, common meat frozen temperature is around -18℃~-23℃, fruit and vegetable temperature is around 0-5℃, ice freezing temperature is around -4℃~-10℃, some food freezing temperature can be lower than -35℃, like tuna be kept at -45℃.

The temperature requirements of some cooled poultry and meat, seafood and aquaculture products, fatty cream cake, catering etc…

1.Pork products central temperature must meet -18℃ before entering cold storage, the cold storage shall keep the temperature to be -18℃ stably without exceeding 1℃ up or lower. Air temperature to be around -18℃~-20℃ and the air relative humidity shall be maintained 95~98%. The pork sell by date is generally 10-12 months. 

2.Beef products central temperature must meet -18℃ before entering cold storage, the cold storage shall keep the temperature to be -18℃ stably without exceeding 1℃ up or lower. Air temperature to be around -18℃~-20℃ and the air relative humidity shall be maintained 95~98%. The beef sell by date is generally 9-11 months.

3.Mutton products central temperature must meet -18℃ before entering cold storage, the cold storage shall keep the temperature to be -18℃ stably without exceeding 1℃ up or lower. Air temperature to be around -18℃~-20℃ and the air relative humidity shall be maintained 95~98%. The mutton sell by date is generally 9-11 months.

4.Poultry products( whole frozen poultry, small package sectioned parts, offals)central temperature must meet -18℃ before entering cold storage, the cold storage shall keep the temperature to be -18℃ stably without exceeding 1℃ up or lower. Air temperature to be around -18℃~-20℃ and the air relative humidity shall be maintained 95~98%. The poultry products sell by date is generally 8-10 months.

    5.Fresh eggs enter the cold storage at temperature -1℃~-1.5℃ and relative humidity is 85-88%, fresh egg sell by date generally is classified: class 1 eggs 9 months, class 2 eggs 6 months, class 3 eggs 3-4 months. Below class 3 cannot storage too much time and shall be separated.)
